Monsters come and go, but Godzilla and Kong see to last forever. And
this is, what, the third time that they have faced off. Does anyone
have some insights as to why these two are so popular?

Not really. Consider three of the genres within the category of
"Monsters":

Vampires
Werewolves
Things from outer space

Can you say that they "come and go"? I suppose so, but they will
always be popular because they require suspension of disbelief. So do
conspiracy theories, and look how popular they are.
